Triple Layer Oreo Peanut Butter Brownies

Ninety percent of the shakes I order are cookies and cream. Even though I pretty much never buy Oreos, I can’t resist their addition to desserts, whether it is ice cream, milk shakes, cheesecake or some other crazy concoction. And since I’ve been trying to make all our desserts instead of taking the easy way out and buying them, I bought a package of Oreos to make some cookies-and-cream treats on my own.

The funny thing about buying cookies to use in other desserts is that it becomes really easy just to eat the cookies instead of making the other dessert. And you think, “We’ll just eat a few cookies tonight, and I’ll still have enough for my recipe.” But, like good ol’ Axl used to say, “I used ta do a little but a little wouldn’t do so the little got more and more,” and before you know it you are eating Oreos for breakfast along with leftover fried chicken and you have no Oreos left for the magical dessert you had plans to make.

So, naturally, I bought another package of Oreos. And, after pouring over dozens of Oreo-related recipes and much deliberation, I decided on these. These brownie bars are the most delightfully decadent dessert I have ever made. A brownie layer, embedded with whole Oreo cookies, topped with crumbled Oreos and chocolate chips and then drenched in a milk chocolate peanut butter top. I’m pretty sure I was thisclose to a diabetic coma after I ate one of these. But honestly, I would do it again. And again. And I need to go running today even though it is nearly 100° outside because I will surely eat another tonight.

Triple Layer Oreo Peanut Butter Brownies
makes 9 large brownies

It's what's inside that counts.

1/2 cup butter (1 stick), at room temperature
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all purpose flour
1/4 teaspoon salt
3 tablespoons cocoa powder
2 cups chocolate chips
1/2 cup peanut butter
20 Oreo cookies

Preheat oven to 350°.

Butter and flour an 9 x 9 cake pan. (The original recipe called for 8 x 8, so either works.)

In the bowl of an electric mixer, cream butter and sugar until fluffy. Add eggs one at a time, then add vanilla. Add in cocoa powder and mix until combined. Add flour and salt, mixing well until batter is smooth and comes together. Fold in 1/2 cup chocolate chips.

Spread batter into the pan. Press 9 Oreo cookies (evenly spaced, like Tic-Tac-Toe) into the batter and press gently. Bake for 25-30 minutes. While baking, crush the remaining Oreos in a ziplock bag. When brownies are finished baking, remove from the oven and sprinkle with 1/2 cup chocolate chips and crushed Oreos. Place back in the oven for about 2-3 minutes. During this time, melt remaining chocolate chips and peanut butter together. You can do this in 20 second increments in the microwave, stirring between each. Remove brownies from oven and pour melted chocolate mixture over top, spreading with a spatula. Make sure chocolate gets down into the Oreo crevices, as it is the “glue” that holds the top to the bottom. Refrigerate for 2 hours before serving.

Let brownies sit at room temperature for 15 minutes before cutting. Eat. Try not to pass out after eating.
